Looking for a cookie that’s tastes terrific and is good for you, too? Who isn’t? Great tasting cookies that are good for you are hard to find. I created this recipe with my husband in mind because he’s been working on eating better, but was missing a sweet and crunchy snack. I tested this combination of ingredients by making a small batch. Boy are they great and easy to make, too. Enjoy! Preheat oven to 350 degrees. Mix together brown sugar blend, Egg Beaters, vanilla, baking soda and peanut butter until thoroughly blended. Add oats and walnuts and stir vigorously until well blended. Drop by teaspoonful onto greased cookie sheet. Pam cooking spray works great and saves the calories of butter or oil. Place cookie sheet in preheated oven and bake for 7-10 minutes or until golden brown. Remove cookies from cookie sheet and place them on a cooling rack. Makes 2 dozen cookies.
