Making creamy sauces can be tricky on a gluten free diet. Most recipes call for wheat flour. Here is a way to make cheese sauce using corn starch as the thickener. Be careful to stir constantly to prevent scalding and to ensure a smooth consistency. This sauce tastes great on vegetable dishes, especially baked potatoes and broccoli. Melt butter on medium heat in small saucepan. Stir constantly with wire whisk. Slowly add cornstarch to melted butter. Stir thoroughly with whisk. Whisk away all clumps before continuing. After cornstarch is mixed, slowly add milk. Ensure that consistency is smooth and not lumpy. Allow to simmer for 1-2 minutes on medium heat until sauce bubbles in the middle. Stir the entire time to prevent scalding Sprinkle cheese into mixture. Do this slowly so that it does not clump together. Stir over medium heat until cheese is completely melted. Do not overcook. Add salt and/or pepper to taste. Serve immediately.
