All you need is rice flour, found at your local whole foods store. Beat butter and sugar together on high speed about 3-4 minutes until light and fluffy. Add eggs one at a time, making sure that it is combined before adding the next one. Pour in vanilla extract. Mix together the rice flour, baking powder and salt. Lower speed of mixer and add a half a cup of the flour mixture and a quarter cup of milk. Alternate the flour mixture with the milk until all ingredients are blended. Do not beat more than necessary. Turn your oven on at 400 degrees. Line a muffin tin with 12 paper cupcake liners. Divide your gluten free cupcake batter evenly into the liners. Bake in the oven for approximately 15 minutes.
