Ice cream sandwiches are delicious treats. It is possible to make your own ice cream sandwiches at home using gingersnap cookies and vanilla ice cream. Purchase gingersnaps cookies. These are small in diameter, usually about 1-1/2″ to 2″ in diameter. Count out an even number of gingersnaps cookies as you will be using 2 cookies for each ice cream sandwich.
