How Do You Make Gingersnap Ice Cream Sandwiches?
Ice cream sandwiches are delicious treats. It is possible to make your own ice cream sandwiches at home using gingersnap cookies and vanilla ice cream. Purchase gingersnaps cookies. These are small in diameter, usually about 1-1/2″ to 2″ in diameter. Count out an even number of gingersnaps cookies as you will be using 2 cookies for each ice cream sandwich. Lay out 12 gingersnaps cookies on a cookie sheet or tray. Lay the cookies down so that the curved side is towards the cookie tray and the flat side is up. Using frozen vanilla ice cream, scoop about 2 tablespoons of the ice cream onto each gingersnap cookie base. Work quickly so the ice cream does not melt. Place a second gingersnaps cookie on top of each scoop of ice cream and press down to make a sandwich.
