This mixture will keep in the refrigerator for two weeks. Pour 1/2 cup sugar and 1 cup water into a pot. Peel a 1-inch section of ginger. Slice the ginger into four pieces. Add the ginger and 1 tsp. peppercorns to the sugar and water. Heat until small bubbles appear and the sugar dissolves. Turn down the heat and simmer for 10 minutes. Pour into a jar and refrigerate until cold.
