How Do You Make Garlic Mashed Yukon Gold Potatoes?
Mashed potatoes are a classic comfort food, and a must-have at any holiday gathering. I like to use Yukon Gold potatoes, because they have an inherent creamy buttery-ness. In a pot, combine the potatoes and enough salted water to cover by 1-inch. (The salted water should be salty like sea water). Bring to a boil and cook until fork tender, about 12 minutes. While the potatoes are cooking, in a small pot melt the butter over medium-low heat. Add the garlic and cook, stirring, until caramelized and golden brown, about 4 minutes. Remove from the heat and add the cream. Return to medium-low heat to gently warm the cream. Make sure not to boil it or you may burn the cream! Drain the potatoes in a colander. Return the potatoes to the pot and place over medium-high heat. Stir them around with a heavy spoon to remove the excess moisture, about 1 minute.
