How Do You Make Fried Zucchini Flowers With Fresh Goat Cheese?
Every year, I plant too much zucchini, and every year, we wonder what to do with all of it. Thanks to Iron Chef Mario Batali, we now KNOW what to do with it – slow down production by eating the flowers, stuffed with fresh goat cheese and sauteed in good olive oil. I’ve adapted his dish a bit. This is a highly seasonal dish – you can do it in the summer with zucchini flowers or in the fall with squash flowers, but once they’re gone, so is this dish! Wash the flowers and remove the stamens. Be gentle! The flowers tear quite easily. In a small bowl, mix together the cheese, egg, scallions salt, pepper and nutmeg. If you like, add a dash of Worcestershire sauce. Stuff each flower gently with this mixture and set aside. Combine the tomatoes, half cup of olive oil, basil and vinegar in a blender or food processor. Puree til smooth, then pour the mixture through a wire strainer (or colander lined with cheesecloth) and set aside. Pour the remaining olive oil into a skillet, heat til smoking, t
