Fried Plantains is a very popular side dish in the Caribbean and very easy to make. In Puerto Rico it is known as “tostones”, but in other Latin countries, like Panama, it is called “patacones”. Peel plantain and cut in 1″ cubes. You will get about 6 to 8 pieces per plantain Heat oil in a pan and fry the cubes turning them until they turn to a light gold color. Put a paper towel on a plate. Take cubes out of the pan and place them on the plate to drain excess oil. Smash cubes with the “tostonera”. If you don’t have one, place the cube between two pieces of wax paper and smash it with a hard flat object. Place smashed plaintains (“tostones”) in a bowl with water and salt (or other seasonings) for 10 to 15 minutes. You can skip this step and just sprinkle the seasonings after the next step. You can also freeze the “tostones” at this point for future use. Heat oil in pan and fry the “tostones” turning them until the color turns to a deeper gold.
