Peel off the paper-like covering of the tomatillos. There will be a somewhat sticky residue on them. Wash them in cold water to remove this covering. Chop into quarters. Set aside. Roughly chop about 1/2 of the small purple onion, and the jalapeno. If you want less heat, this is the time to remove the ribs and seeds from the jalapeno. Chop the cilantro until you have a cup. Combine all chopped ingredients and pour into a food processor and pulse, or chop with a vegetable chopper, until finely chopped. Season with kosher salt and 3 Tbsps lime juice. Put into a colorful dish for serving, to show off the fresh green color.
