This low fat version is an excellent side dish as well as a nice addition to plain yogurt. Fresh cranberries are available in the vegetable section in one pound bags. Although the cranberries are pre-washed, it is a good idea to wash the cranberries in cool water in a colander before cooking. Over medium-high heat add freshly washed cranberries, pineapple chunks, orange juice, and splenda (or sugar substitute) to a medium sauce pan. Use wooden spoon to mix thoroughly. Be sure the sugar is thoroughly incorporated. Cook covered for about 10 minutes or until the cranberries burst open.
