How Do You Make Fresh Low-Fat Cranberry-Pineapple Sauce?
Don’t open a can for this years cranberry sauce. It’s quick and easy to make fresh cranberry sauce from scratch. This low fat version is an excellent side dish as well as a nice addition to plain yogurt. Fresh cranberries are available in the vegetable section in one pound bags. Although the cranberries are pre-washed, it is a good idea to wash the cranberries in cool water in a colander before cooking. Over medium-high heat add freshly washed cranberries, pineapple chunks, orange juice, and splenda (or sugar substitute) to a medium sauce pan. Use wooden spoon to mix thoroughly. Be sure the sugar is thoroughly incorporated. Cook covered for about 10 minutes or until the cranberries burst open. As the cranberries burst open, pectin inside the cranberries will thicken the mixture into a nice sauce. Turn off the heat and leave uncovered for at least 10 minutes for the sauce to thicken.
