Making your own tomato sauce from your own garden tomatoes is one of the most rewarding experiences as a gardener. You should feel free to add or remove any of these ingredients to accommodate your own garden supply and taste. Fill a large stock pot with water 3/4 of the way and bring to a boil. In batches of 5-8 tomatoes, add to the boiling water. Let the tomatoes stew for about 3-5 minutes or until the skin starts to peel off the flesh of the tomatoes. Remove with a slotted spoon and put aside in large bowl. Feed all the tomatoes into the tomato press. Throw all the skins and seeds into compost bin and reserve all the “juice” in a large bowl. In a large stock pot, add olive oil, garlic, onions, peppers, basil, salt and pepper. Sauté on low flame until the onions become translucent, about three minutes.
