How Do You Make Fish Nuggets (Large Quantity Recipe)?
• Preheat oven to 500 degrees F. • Combine bread crumbs and salt in a large bowl. • Add low-fat yogurt, or reduced calorie salad dressing or low-fat mayonnaise to another large bowl. • Cut up fish filets, if needed, then dip in yogurt, or salad dressing, or mayonnaise. • Place fish in bread crumbs and turn to coat well. • Spray a 13 x 18 x 1-inch pan with nonstick cooking spray. You could also place the fish on 10 x 15 jelly roll pans or a large roasting pan. • Bake 13 to 17 minutes or until fish filets are golden brown and have reached 145 degrees F for at least 15 seconds. Serve 2 portions of fish to each diner.
