Give the cup cake tray a quick spray with non-stick cooking spray. Next, gently tuck one slice of ham into each cup. You can substitute the ham for sliced turkey or slice roast beef…whatever works best for you. Place one tbsp of chunky salsa into each ham cup. Again, you can substitute the chunky salsa with mushrooms, spinach, oarmesean cheese, etc. It’s totally up to you. Crack and place one egg into each ham cup. Feel free to add salt, pepper, parsley to taste. Top each ham cup with the shredded mozzerella cheese and bake at 350 for about 20 minutes. For firmer eggs bake an extra five minutes. Cool and serve!
