• Dice onion into very fine pieces. • Wash the diced onion in cold water very gently, without smashing. • Squeeze lemons in a large bowl. This bowl is where the Ceviche will be placed. • Place diced onion in the large bowl with lemon and ½ a teaspoon of salt. • Set aside for 1 hour. At this point, make note of the time so as to know when the 1 hour has passed. • Cook shrimp in boiling water for 3 minutes. Add ½ a teaspoon of salt to pot. • Cook half of the tomatoes for 3 -4 minutes. • Blend the raw and cooked tomatoes. • Dice the cilantro into small pieces.
