These cakes are delicious, suitable for breakfast, lunch, and dinner. For the salmon cakes, just substitute canned salmon for canned tuna. Stir the cubed bread into the beaten eggs. Mash well. Crumble the tuna and into it stir the peppers, onions, and cheese. Stir the pepper mixture into the bread mixture. Salt and pepper lightly. Form by 1/4 cup lots, into cakes about 1/2 inch thick. In a heavy saucepan, heat a little oil and cook cakes on both sides until they are golden brown. Serve with sauce if desired. Enjoy!
