This is a delicious and quick way to throw together a pork chop dinner using boxed potatoes and frozen green beans all in one dish. I’m not fond of pork chops, but this recipe is so good that even I enjoy the chops! The combination of the potatoes and beans are really yummy, and makes this casserole an easy, complete meal. Preheat oven to 375 degrees. Heat shortening in large skillet until melted. Cook pork chops over medium heat until brown on both sides; sprinkle with salt and pepper. Empty boxed potatoes into very lightly greased (or just use a light coating of cooking spray – so easy!) 2-quart casserole dish; sprinkle with sauce mix found in box. Stir in boiling water, milk, butter and pepper sauce; mix in beans. Place pork chops on top of potato mixture. Cover and bake until pork chops are tender, about 50 – 60 minutes. Makes 4 servings.
