Peanut butter fudge is delicious and would make a great treat for your family or for a party. This peanut butter fudge recipe is not only delicious but also quick and easy! Grease a 8 x 8 inch casserole dish (or pan), and set aside. Place the confectioner’s sugar in a large mixing bowl, and set aside. Melt the butter in a medium-sized saucepan over medium heat. Add the brown sugar, and milk. Bring the mixture to a boil and boil for 2 minutes while stirring frequently. Remember to bring it to a “hard, or rolling boil” before starting to time. Remove from heat and stir in the peanut butter and vanilla. (If you like a more peanut buttery flavor, you may add 1 cup peanut butter instead of 3/4 cup.) Pour this mixture over the confectioner’s sugar and beat until smooth. When the fudge is smooth, pour into the greased 8 x 8 inch dish. Let cool, and cut into squares. Enjoy!
