How Do You Make Easy Meringue Cookies?
Meringue is often used to top cream and pudding pies. Meringue can also be made into cookies. Meringue Cookies have a light, airy texture and taste. Preheat oven to 200 degrees. Combine the sugar and cornstarch together in a small bowl. Whisk the egg whites at medium speed. Once they are frothy, begin to slowly add the granulated sugar and cornstarch mixture, a tablespoon at a time. Once all of the sugar has been added, add any extracts you are using. Turn the mixer to high speed. Continue to beat the egg whites until they are very thick. They should appear glossy. Stop mixing once the whites form very stiff peaks when the whisk is pulled out of the mixture. This should take about 7 to 10 minutes in a stand mixer. Using a teaspoon, drop small rounds of meringue on to a baking sheet covered in parchment paper. To form “kisses,” use a piping bag or storage bag with a corner snipped off and push the meringue through onto the parchment. Bake the meringues at 200 degrees for about 2 hours.
