Homemade yogurt cheese with herbs is a wonderful treat year round but especially in the summer when it is made with fresh herbs! It is a light, refreshing change from all those heavy cheeses and dips. It’s delicious, nutritious and so easy to make. Use it as a dip for veggies or a spread on crackers or sandwiches. Yum! Dump the yogurt into one of the mixing bowls and mix the chopped herbs into the yogurt. Position the strainer over the other mixing bowl so that it is resting on the rim. Line the strainer with 1 or 2 of the paper towels, enough so that the mesh is covered. Scoop the herbed yogurt out of the bowl into the paper towel lined strainer. Place the remaining paper towels over the yogurt and weigh it down with the stoneware bowl or lightweight bowl with bags of rice in it. Put it in the refrigerator overnight for at least 8 hours.
