How Do You Make Easy Homemade Peanut Butter Cupcakes?
These peanut butter cupcakes are easy and delicious. Get everything prepared beforehand. Grease two 12 cup cupcake pans. You can also do mini-cupcakes, kids really go for those. Preheat your oven to 350 degrees. In a large bowl, add these ingredients: a half cup of smooth or chunky peanut butter, one cup of milk, 1 and ¾ cups of flour, 2 eggs, ½ teaspoon of vanilla, ½ teaspoon of salt, ¾ cup of sugar, one tablespoon of baking powder, and four tablespoons of softened butter (margarine works fine as well, but the flavor might not be as good). With a mixer, mix on low until the ingredients are just moistened, then increase the speed to high, and mix for two minutes. Spoon the batter into the greased cupcake pans, two thirds full, and top with peanut-butter or chocolate pieces. Bake peanut butter cupcakes for 18 to 20 minutes, until a toothpick comes out clean when inserted in the center of one of the cupcakes. Cool your cupcakes completely, on wire racks, before serving.
