These spicy cookies are good to have on hand for healthy snacks. This recipe makes approximately 60 cookies. Cream together the butter and honey. Cream in the eggs and vanilla. Blend until very smooth. Mix together, in another bowl, the flour, cinnamon, ginger, nutmeg, cloves, and salt. Add the dry ingredients all at once to the butter mixture and blend thoroughly. With your hands roll the dough into a log about 10 inches long, adding a dusting of flour if dough feels sticky. Wrap roll firmly and refrigerate until it is firm, at least 4 hours. Heat oven to 350 degrees. No need to butter pans. Slice dough very thinly and place on unbuttered pans. Bake for approximately 8 minutes. Edges should be browning. Cool on racks. Enjoy!
