How Do You Make Easy, Healthy, Cracked Wheat Muffins?
Good basic ingredients with added fruit make this a healthy breakfast or snack. Heat oven to 400 degrees. Butter muffin pans. Add milk to the cracked wheat and set aside for 10 minutes. Meanwhile, in a large bowl, mix together the flour, sugar, baking powder and salt. After the ten minutes is up, add the egg and the oil to the cracked wheat and beat well. Stir in the raisins. Add the wet mixture, all at once, to the flour mixture, and blend until all is barely moist. Twelve strokes should be enough. Spoon into buttered pan. Bake for approximately 15 to 20 minutes. Cool on racks. Enjoy!
