Cut the jalapeno into quarters, we will be using 1/4 of the jalapeno for this recipe. If you want a more mild salsa remove the seeds from the jalapeno. Peel the medium sized onion. Cut into halves. Add the 4 large tomatoes, 1 medium sized onion, 1/4 cup fresh cilantro, 1/4 medium sized jalapeno, 2 cloves garlic, 2 teaspoons vinegar or lemon juice, and the salt to a blender or food processor. Mix it all up together on medium speed until you get the desired consistency. Enjoy this fresh salsa with you favorite chips or serve with your favorite Mexican foods!
