Mix together the chopped cheeses, the chili sauce and salt and pepper. Adjust seasonings. Beat egg whites until stiff. Lightly beat the egg yolks. When the peppers are cool, gently cut open one side. Using a spoon, scrape out all the seeds and connective tissue. Stuff the peppers with the cheese mixture. Stir the beaten egg yolks into the beaten whites. Dip the peppers into the egg mixture and then into the flour. Fry until they are golden brown. Turn gently to brown on all sides, taking care not to lose the cheese filling.
