How Do You Make Easy Chicken Enchilada Casserole?
This was a recipe my mom made while I was growing up and my sister and I loved it! We would request it for any special “birthday dinners.” I have made it for work parties and always have to give out the recipe. It makes a lot so it is great for get-togethers! Trim the excess fate off the chicken breasts and boil (I was taught to make this by boiling a whole chicken then picking from the bone when cool- I prefer buying boneless breasts) Allow chicken breasts to boil long enough to become very tender- they should fall apart when fork is inserted (45 minutes) When chicken is almost done, you can preheat oven to 350 degrees The bag of tostitos will cover the bottom of the casserole dish.
