Chicken Adobo is probably the most well-known dish in Filipino Cuisine. It is easily recognizable by its wonderful aroma, tenderness, and flavor. There are many different variations of this dish and many different ways to cook it. Just like most Italians have their own recipe for spaghetti, so too do we Filipinos have our own recipes for Adobo. Here’s mine – it’s a wonderful way to introduce Filipino cuisine to someone who’s never tried it before. It’s also really easy and a great dish to bring for potlucks. Trust me on this – I’ve never gotten a bad review when I’ve made this dish. Enjoy! In a large pot, combine chicken, garlic, peppercorns, bay leaves, soy sauce, and vinegar. Bring to a boil. Once boiling, cover pot with a lid and decrease temperature to low heat. Simmer on low heat for an hour, stirring occasionally. Add salt and pepper to taste. Serve with rice.
