Add eggs, oil, and lemon extract to cake mix. With mixer on low speed, stir until cookie dough is well blended. In a separate small bowl, measure the confectioners sugar. Use the cookie scoop to scoop out round balls of lemon cookie dough. Drop each ball of cookie dough into confectioners sugar. Roll the ball of dough until lightly covered in confectioners sugar.
