How Do You Make Easy Cheesy Chicken Enchiladas?
I am eternally on the hunt for an easy, but tasty and filling dinner. And when my mother-in-law introduced me to the chicken enchilada, I knew that I was in Mexican Dinner Heaven! These have been a go-to dinner in my house when everyone is craving something delicious, they just don’t know what! This always hits the spot…enjoy!! Rinse chicken breasts in water and then place into a small baking dish. Put enough water in the dish to cover the chicken breasts about half way. Bake in 350 degree oven for about an hour. Depending on the thickness of the chicken breasts, it could take longer, just check the chicken after an hour and make sure there is no pink in the middle. Remove chicken from oven and place one chicken breast at a time onto a cutting board. Using two forks, start to shred the chicken into peices. Place into mixing bowl. Continue to shread all chicken breasts until done. Add to the chicken in the bowl: 1 can red enchilada sauce 1 jar salsa about 1 cup cheese 1 tub (8oz) sour
