Toward the end of the cooking process, toss in the minced garlic. Be careful to stir frequently as the garlic will burn quickly. Combine all ingredients in a tall sauce pot. Alter the quantities to your liking. Bring the mixture to a boil. Reduce the heat and allow to simmer for 20 to 25 minutes, stirring occasionally. Remove from heat and transfer to air-tight container or glass bottle with a lid for storage.
