How Do You Make Dianes Excellent Rhubarb Pie?
I have perfected the art of making an Excellent Rhubarb Pie. This has been my favorite dessert ever since I was a little girl. Now that I am grown and have my own rhubarb patch, I look forward, with great anticipation, to the moment when my rhubarb is ready to pick. Nothing tastes more like Spring to me, then tangy, sweet rhubarb pie. GET YOUR RHUBARB: If you have your own patch, pick an armful of rhubarb stalks. Just grasp near the base of a stalk and pull. If you buy it at the store, you want at least 15 – 20 stalks. They vary in size so it’s hard to give you an exact number. You want to end up with 8 cups of 1 inch chunks, after you clean it, remove the leaves and cut it up. PREPARE THE FILLING: In a large bowl, put the rhubarb chunks, sugar, flour and salt. Toss to coat and let sit for about an hour, giving it a toss a few times during that hour.
