Not only does my diabetic husband love, but also my whole family. … We are using this diabetic ice cream cake in place of regular cakes at celebrations! Grate or cut into slivers, 4 to 5 miniature chocolate bars. Place 3 or 4 ice cream sandwiches on a small platter. Spread a layer of the cool whip on top of the sandwiches. Sprinkle the grated chocolate on top of the cool whip. Place another layer of ice cream sandwiches on top. Spread with cool whip. Sprinkle with grated chocolate. REPEAT THE PROCEDURE: Place another layer of ice cream sandwiches on top. Spread with cool whip. Sprinkle with grated chocolate. This will give you 3 layers of ice cream sandwiches. Spread cool whip over top and sides of ‘cake’. Sprinkle top and sides with grated chocolate. Place in Freezer until ready to use.
