As a teenager, I used to make these with the intent of hogging down the whole pan. I don’t think I was ever able to eat more than four… To make the crust, combine the butter, powdered sugar, dash of salt, and 2 c of flout. Mix well. Press gently into a 9×13 baking pan, and bake at 350 F for 15 minutes, or until slightly browned. For the filling, combine the 1/4 c flour and granulated sugar; mix in beaten eggs and lemon juice. Pour onto a slightly cooled crust. Bake at 350 F for 25 minutes, or until set. Cool slightly, then sprinkle with powdered sugar. Cool completely before cutting.
