How Do You Make Delicious Fried Zucchini Sandwiches Italian Style?
When I was a kid and we had a garden, one of my fondest memories was making and eating fried zucchini sandwiches. They were delicious and at the time, it was the only way I ate zucchini. With summer arriving, and farmers markets ready to go, my appetite longs for those zucchini sandwiches. First, go to your local produce market or farmers market and find some medium size zucchini. One will do, two if you plan on serving for 2 or more people. Rinse of the zucchini and slice in 1/3 inch slices with a sharp knife. Meanwhile, place a sauté frying pan on medium high heat with olive or vegetable oil coating the base, perhaps 4 tablespoons. Prepare an egg wash solution by mixing 2-3 eggs with 1/3 cup milk. Mix well with a whisk. Put one cup of flour in a bowl and season with salt, pepper, and garlic powder. If so inclined, a dash of parmesan cheese taste good as well. Mix together. Next, dip the zucchini slices in the egg wash, coat with the flour mixture, and fry in frying pan for about 3 mi
