How Do You Make Delicious Fried Plantains?
Plantains are the big brothers of the smaller bananas we all know and most of us love. Plantains must be cooked before they are eaten. They are used in soups and stews, baked and fried. Any way they are a delicious addition to any meal, pairing well with any meat. They are absolutely perfect with sides of rice, beans, and a cabbage salad. The riper plantains get the sweeter they will be. For this recipe you want plantains that are still green. First cut them into slices about 3/4 to 1 inch thick. In a heavy frying pan, pour your vegetable oil about 3/4 of an inch deep. If you read my other recipes, you will notice that I always use olive oil when I can, but for frying plantains, you must use a vegetable. When the oil is hot, put a layer of sliced plantains in the pan and fry until they are medium brown on the bottom. Turn and brown on the other side. Keep the slices moving so they do not stick.
