My family loves fluffy dumplings, especially with chicken pieces, and I try to make this favorite dish often. There are several kinds of dumplings, and most dumplings are grouped into one of three categories: boiled dumplings, steamed dumplings, or baked dumplings. But whichever way you choose to cook your dumplings, they are delicious and almost melt in your mouth good. Ingredients for the chicken: • 1 5-6 pound stewing chicken, cut up • 2 sprigs parsley • 4 stalks celery • 1 carrot, sliced • 1 small onion, cut up • 2 teaspoons salt • 1/4 teaspoon pepper Place the chicken pieces in a large pot or Dutch oven with enough water to cover the chicken. Add the parsley, the celery, the sliced carrot, the onion, the salt and the pepper. Cover this mixture and bring to a boil. Cook the chicken over low heat until the chicken is tender and almost falling from the bones, about 2 hours.
