My husband is an avid deer hunter and loves the tenderloin for steaks, but the rest of the deer went to waste until he discovered the dehydrator. He loves deer jerky and this is a favorite of all our friends and family. He makes enough for all and freezes what is left for later. Cut deer into 8 to 9 inch strips, no more than 1/4 inch thick, and 2 to 3 inches wide. It is easier to cut if chilled and near frozen. Mix all remaining ingredients into a large bowl. (Glass bowl is best) Place meat strips into marinade and refrigerate at least 3 hours; overnight is best. Remove meat strips from marinade and pat dry. Place strips onto dehydrator trays about 1/4 inch apart and dehydrate for 8 to 9 hours. Some trays will dehydrate faster than others. Check the manufacturers instructions of your dehydrator for jerky instructions. Jerky is done when the meat is almost black. The strips will crack, but not break. Let cool completely and place jerky in freezer bags or vacuum bags. We freeze all of ou
