How Do You Make Curry Colcannon?
Purist will be horrified by this. It’s not an Irish dish. I’ve got a tiny bit of Irish in me, but around our house we eat lots of curry. In honor of St. Patrick’s day I thought I’d make some colcannon, but I couldn’t resist spicing it up, and was missing a few things. The fusion dish I came up with turned out pretty tasty, so I think I’ll keep it. Peal, and chop the potatoes. Cover them with water and boil until soft. This may take about 20 minutes. In the mean time chop your cabbage. Put the oil into a skillet and turn on the heat to medium. Add the Cabbage, Coriander, Cumin, and chili powder. Stir fry until the cabbage is nicely wilted. When the potatoes are soft, drain the water, and mash. Add the yogurt a little at a time. You may need to adjust the amount depending on the size of the potatoes. Then add the black pepper, the turmeric and the fried cabbage and the bacon bits. Mash everything together. Alternatively you can serve the potato and cabbage separately.
