How Do You Make Curried Lamb And Chickpea Lettuce Wraps?
Curried lamb and chickpea lettuce wraps are a very simple, easy to prepare appetizer that does not lack anything in presentation or taste. Curried lamb and chickpea lettuce wraps can even be prepared an hour ahead of your guests arrival, making them an ideal appetizer for a large party or dinner party. These lettuce wraps can also be served as a first course with a glass of spicy, full-bodied Argentinean or Chilean red wine or brown ale. Whisk the curry paste into 1/3 cup warm water in a medium saucepan. Add the lamb meat, spinach leaves, Roma tomatoes and chickpeas. Cook over low heat for 5 to 7 minutes. Stir the mixture and turn up the heat to medium-high. Cook for an additional 2 to 3 minutes to remove the liquid. Place the lettuce leaves on a large serving platter and spoon about 1/3 cup of the lamb and chickpea mixture into each lettuce leaf. Cover the serving platter with plastic wrap and place the platter in the refrigerator to chill for 15 to 20 minutes before serving.
