This sauce is excellent on cold roast beef. Makes about 1 1/2 cups. Peel, seed and dice cucumber. Mince tarragon. Whisk together cucumber, sour cream, horseradish, vinegar, minced tarragon, salt and pepper to taste in a bowl. Chill covered for at least 2 hours. Garnish with a tarragon sprig.
