Raita is a delicious side-dish used in many Indian meals and also functions as a savoury side-dish. Raita is essentially yoghurt flavored with vegetables and/or herbs. Raita can be made with your choice of vegetables and/or herbs, substituting or adding to this recipe. Step 1 Prepare all ingredients by chopping them and setting them aside. Step 2 Water can be added to the yoghurt as an option, depending on the desired consistency. Step 3 Add all the ingredients to the yoghurt, saving a small amount of the coriander for garnishing. Once mixed, add the remainder of the coriander to the raita as a garnish. Step 4 Keep raita in the refrigerator for about 20 minutes to allow it to set and for the flavor to infuse the yoghurt. Raita can be used when food is too spicy, as a savoury side-dish, or can be enjoyed on its own!
