It is always faster and easier to layer ingredients into a Crock pot than stuffing and rolling one enchilada at a time. The taste is the same and looks very appetizing served in the crock pot. The aroma filling your home makes it difficult at best to wait the two hours before the casserole is ready to serve. In a large skillet, fry ground beef, onion and jalapeno, pour off grease. Add garlic, salt and pepper, cayenne pepper, chili powder and red chili flakes. Simmer for 15 minutes, stirring occasionally. Turn off heat. Steam corn tortillas in tortilla steamer or if you don’t have one, you can use two plates and two damp paper towels. Place a damp paper towel on top of one plate and place tortillas on top, place the second damp paper towel over the tortillas and then the second plate.
