How Do You Make Creamy Potato Salad?
If you like your potato salad creamy, yet crunchy, check out this recipe for my favorite side dish I’ve been eating for years. Great for a side dish to potlucks or holiday dinners. Step 1 Bring 6 cups water to a boil in covered 8 quart pot. Insert the 3 pounds of 1-inch cubes of potatoes. Boil at medium heat for 15 min. Step 2 Add peas during the last 2 min. of boiling. Drain peas and potatoes, then place under cold running water. Step 3 Thinly slice green onions and eggs with a sharp knife. At this point you can add thinly sliced radishes. I personally do not like radishes, but for someone that likes their potato salad crunchy, this does the trick. Step 4 Combine mayonnaise, sour cream, mustard, salt and black pepper in large bowl; mix until well blended. Add potatoes, snap peas, green onions and eggs; mix. Step 5 Cover and refrigerate at least 2 hours. Enjoy!
