How Do You Make Creamy Chicken Orzo?
This creamy chicken orzo is too solid to be soup, yet should still be served in a bowl and eaten with a spoon. It makes for a great starter course when entertaining guests. First you must cook the orzo. Boil water. Add orzo once the water has reached a boil. Orzo usually takes around 12 to 15 minutes to cook. Once the orzo has been cooking for about five minutes or so begin the broth. Pour two cans of your favorite chicken broth into a pot. Add salt, pepper, parsley and oregano. Chop the carrots and celery into bite-sized pieces and add them to the broth to cook. Simmer the broth for about 20 minutes. Orzo will finish around this time. Combine the orzo and the broth. Let it simmer for another five minutes or so. The orzo will absorb a majority of the broth. Refrigerate overnight or for several hours. Take out and heat on the stove. The orzo will have absorbed most of the broth and the dish will be fairly solid. Once what little liquid remains starts to boil, orzo is ready to serve.
