How Do You Make Creamy Chicken Enchiladas (Recipe)?
This recipe is a favorite in my family. I hope it will be for yours too! Pre-heat oven to 350 F. Boil the chicken pieces until they are cooked through. In a large bowl, mix the soups, chillies, sour cream, and 1 cup of cheese. Stir until well mixed. Divide the mix from step 2 into two bowls. Drain the chicken. Add chicken to one of the bowls and mix well. Place about 2 Tbsp of the mixture containing the chicken in the center of a tortilla. Roll the tortilla, and place in a 9×13 baking pan. Repeat until all the chicken mixture is gone. Spread the remaining mixture over the top of the enchiladas. Sprinkle with the remaining cheese. Bake for 25-30 minutes until heated through and cheese is melted. Serve with sour cream and salsa.
