How Do You Make Creamy Cheesy Chicken Enchiladas?
Here is quick dinner idea for those busy nights. If you like Mexican food, its perfect for your taste buds. Here is a great Mexican recipe that I make in my home. My family loves it. It is really quick and easy. It makes wonderful leftovers to bring to work the next day if there is any left. 1. Heat the oven to 350°F. Spray 2-quart shallow baking pan with non-stick spray. 2. Stir the soup, sour cream, picante sauce, and 1/4 cup shredded cheese in a medium bowl. 3. Stir 1 cup soup mixture, chicken and cheese in a large bowl. 4. Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side up in a 2-quart shallow baking dish. 5. Pour the remaining mixture over the filled tortillas. Top with the remaining shredded cheese. Cover the baking dish in tin foil. 4. Bake for about 25 minutes or until the enchiladas are hot and bubbling. This is great with a side of refried beans and Mexican rice. I made this a Cinco de Mayo party one year and everyone loved it.
