I use to think that biscotti cookies were really hard to make but they are so simple! Try this recipe and see! Preheat oven to 350 degrees. Coat cookie sheets with cooking spray. Combine vanilla, eggs, egg white and honey and mix well. In a separate bowl, combine flour, sugar, cinnamon, baking powder and salt. Add wet and dry mixtures together and combine well. Add white chocolate chips and cranberries and mix well. Divide dough in half and form two logs with the dough. They should be about 12 inches long 1/2 inches thick and smooth on the top. Bake for 25 to 30 minutes. Take them out of oven and let them cool about 10 minutes. Reduce your oven temp. to 325. On a cutting board or a clean flat surface, slice each log on a diagonal into 12 slices about 1/2 inches thick. Place pieces back onto cookie tray and bake for an additional 8 minutes and then flip them over and bake them on the other side for another 8 minutes. Let cool and store in an air tight container.
