How Do You Make Country Scalloped Potatoes?
Potatoes are great sides. The wonderful thing about potatoes is that you can make them a million and one ways. Scalloped potatoes take no time to make and they are quite delicious. Lightly grease 2 quart casserole dish. Place potatoes in saucepan. Add enough water to cover potatoes and let boil over medium-high heat. Cook potatoes until they are partially done (about 10 – 15 minutes). Then drain and rinse in cool water until potatoes cool. Then set aside once potatoes have cooled. Melt 4 tablespoons butter in medium saucepan. Add flour and salt and stir until smooth. Then add milk, cheddar and mozzarella cheese and stir until melted. Heat oven to 350 degrees. Cut potatoes approximately 1/2 inch in thickness. Then layer in 2 quart casserole dish. Then top with green onions and cheese sauce. Repeat layering, then add cheese sauce. Then add remaining butter and cracker crumbs on top layer. Then bake uncovered for 30 to 35 minutes or until bubbles. Remove from oven and let cool.
