I always get requests for it whenever I’m invited to pot lucks. You can top it with fresh fruit or canned pie filling. It takes minutes to make and it’s oh-so-yummy! Soften cream cheese and thaw tub of Cool Whip. Combine bricks of cream cheese, Cool Whip, milk, confectioner’s sugar, and vanilla extract in a large mixing bowl. Beat ingredients with a hand mixer on medium speed for two minutes or until no longer lumpy. Batter will be thick and fluffy. If batter is very stiff, add more milk. Spread mixture evenly into pie crust with a spatula. Top mixture with pie filling or fresh fruit. Chill cheesecake in refrigerator for at least two hours and then serve. Enjoy!
