Combine 1 cup of loosely packed mint leaves and 1 cup of sugar in a food processor bowl, and activate until the mint leaves are minced. Add to the processor bowl the following ingredients: 2 pints of washed and hulled strawberries and 3/4 cup honey. Turn food processor on again and process until berries are pureed. In a Large bowl, combine: the strawberry puree with 1 quart of plain yogurt. Stir until blended. Cover the bowl and refrigerate over night. The next day, ladle the Cold Strawberry Yogurt Soup into individual sized serving bowls. Add to top of bowls a slice of fresh strawberry and a fresh mint leaf.
