Remove the pan from the heat source. Step 2 Beat the eggs in a bowl until they are smooth, then stir them slowly into the mixture. The resulting dough should be fairly thick, but also smooth and pliable. Step 3 Heat the cooking oil in a frying pan or skillet until it is sizzling. You ll also need one special piece of equipment to prepare the churros a large cookie press (“churrera”) or a pastry bag.
